  Although they never forget the Mediterranean-Brazilian-vegetarian roots of their cuisine, Malu and Alberto love to experiment and add new ingredients and techniques  to their dishes from different cuisines from all around the world. Along with their highly skilled team, they work tirelessly with the freshest and finest seasonal ingredients of the area, like the finest local black truffles from Norcia, or the formaggio di fossa, a prized and rare cheese that is matured underground. In theory, what they seek is to offer a new and balanced gourmet menu everyday, consisting of an antipasto, a primo, a secondo and, finally, the dolce. However, what they actually do is create a real feast for the senses where flavours, textures and colours are subtly intertwined.   rest_generalinfo_img1   A proper Italian meal, either in the humblest home, or in a gourmet vegetarian restaurant, has to be accompanied by the correct choice of wines. Alberto’s list includes a fine selection of diverse and appreciated Italian wines from the most acclaimed regions, such as Sicilian Regaleali, Brunello di Montalcino or Barolo. Each wine pairing has been carefully thought out to combine perfectly with the meal. Buon appetito!
