Montali’s history cannot be written. Tons of paper and countless bottles of ink would be necessary to express a tiny part of the love that helped place the cornerstone of this luxury Country House, and to hold its bricks together until today.
Malu and Alberto are the masterminds behind this lovely Country House. She was an architect before she became a renowned chef and he, a go-getter, developed into a talented businessman. Back in the eighties, they had a pub-restaurant in Perugia that was highly popular among artists, international students, the local hippie movement and, in general, all sorts of people. After a very successful and happy period, they decided they wanted to move on, gathered what little money they had, and bought a ruined property that, little by little, they started to rebuild with dreams, courage and patience. They sought to add different concepts to the term “luxury hotel”, by pampering their guests not only in traditional ways. Their cuisine is a perfect example. Their fusion of vegetarian, Italian, and Brazilian food is well known and acknowledged all around the world.
They have grown from nothing to one of the best Country Houses in Italy and, definitely, one of the most acknowledged, avant-garde vegetarian restaurants in the whole world. So, as you can see, these and a thousand more reasons make it impossible to write Montali’s history. It cannot be read; you have to live it, sleep in it, smell it, walk through it, and feel it.
